Mr. Fabien Chalard mastered the art of French cuisine and restaurant management by opening and managing several restaurants in France (Lyon, Paris, Courchevel) and possesses the ‘Maître Restaurateur’ title, the only title delivered and recognized by the French government, which assesses expertise in the catering industry. As such, Mr. Fabien Chalard is part of the Association des Maîtres Restaurateurs, which is dedicated to spreading the French gastronomy and savoir-faire in France and around the World. Since November 2010, the French cuisine is recognized as a world’s intangible cultural heritage by UNESCO.
He first acquired his expertise in catering management by developing his first establishment in 2001, Le Comptoir de la Bourse, in Lyon, France, a cocktail bar specialized in providing patrons with high-quality food and cocktails in a trendy, and jazzy atmosphere. The cocktail bar was expanded and remodeled in 2005 and again in 2014 to become one of France’s reference in terms of atmosphere and gastronomy.
In 2010, Mr. Fabien Chalard was elected as President of the hotelier, restorer, coffee owners and caterer Union in the Rhone Alpes Bourgogne region. Mr. Fabien Chalard was also an elected member of the Lyon Chamber of Commerce and Industry, and was part of the HospitalityCommission which created the label “Veritable Bouchons Lyonnais”, which remains the only label recognizing the quality of a typical Lyon restaurant.
A food enthusiast and Entrepreneur, Mr. Fabien Chalard went on to develop other projects such as Le Bar which obtained the Design award in 2006,1’lnuit, a typical French restaurant located in the French mountains, and Pop-up concepts such as Le Bar a bar and I’ln-fusion developed for the 2009 International Hotel, Catering and Food Trade Exhibition (SIRHA).
Mr. Fabien Chalard also created a Hospitality training and vocational center in 2009 which provides the required lessons to obtain a license to operate a Hospitality Institute (café, hotel or restaurant), as well as essential training to succeed in the Hospitality industry.
In June 2013, Mr. Fabien Chalard created Ten Fingers, an outdoor café that provides affordable food, located in Place Bellecour in Lyon, France. Finally, Mr. Fabien Chalard opened the restaurant Pléthore & Balthazar in Lyon, France, where he reinvented the restoration concept by offering patrons a different set of menu for every hour of the day.
Mr. Fabien Chalard also gave classes and created training programs for internationally recognized institutes such as the Institut Paul Bocuse and Bacardi Martini.
Fabien wants to export French gastronomy and savoir-faire by creating The P&B Restaurant in Miami Beach, Florida that will respect French tradition by serving true French specialties and by providing an excellent customer service that can only be found in high-end renowned French Restaurants.
Moreover, in order to deliver a true French experience, Mr. Fabien Chalard also plans on inviting renowned French Chefs and Pastry Chefs who will show their skills for a limited period of time, and who will contribute to the Restaurant’s image in South Beach.
